A plan for the family #staycation is to sample food from every country in Europe from our own home
One a day.
Some of them are dead easy (pizza/pasta anyone?), some of the countries are much harder.
Would love to know your favourite dish from your home country in Europe (or anywhere else, why not?)
What would you serve to someone who has never been to your country before? Bonus points if it's #vegetarianCooking and/or has a good story attached!

@ColmDonoghue hmm I used to like black pudding before I was vegetarian, but I'm not really sure I'd be able to find it here. I've also never really liked a soda bread, on the other hand I've only had it once or twice, so definitely open for a good recipe if you have one?! I was thinking colcannon for Ireland? Is that sufficiently Irish or should we go with something else?
Colcannon is an excellent (flavorful) 100% Irish veggie option. Gets my vote.
Soda bread with butter and smoked salmon is excellent, I’m just not sure exactly how traditional the addition of smoked salmon is. And it obviously ain’t veggie.
